Salmon is always popular and this healthy recipe takes just five minutes to prepare and is super-quick to cook.
4 x 170g salmon fillets which have been dried with a paper towel
3 minced garlic cloves
1 sliced lemon
3tbsp extra-virgin olive oil
¼ cup soy sauce
1/3 cup honey
1tsp red pepper flakes
2tbsp lemon juice
Freshly ground salt and black pepper
- Whisk together the lemon juice, soy sauce, honey and red pepper flakes in a medium bowl.
- Heat a large skillet over medium-high heat with 2 tablespoons of oil. Once the oil is hot, add the salmon, skin-side up and season with salt and pepper. Cook the salmon until golden for about six minutes before turning over and add the remaining oil.
- Add the garlic to the skillet and cook for approximately one minute before adding the honey and soy sauce mixture and sliced lemons. Continue to cook until sauce reduces by about a third.
- Baste salmon with the sauce, garnish with sliced lemon and serve.
