    Sesame Chicken Schnitzel Bowls with Feta Tzatziki

    This dish combines the crunch of sesame schnitzel with the creamy zest of tzatziki, creating a perfect balance of taste and texture. Ideal for a nutritious weeknight dinner or a unique meal prep idea, this recipe promises to be a delightful addition to your culinary repertoire.

     

    Ingredients:

    For the Chicken Schnitzel:

    • 4 boneless, skinless chicken breasts, pounded thin
    • Salt and pepper, to taste
    • 1 cup all-purpose flour
    • 2 large eggs, beaten
    • 2 cups breadcrumbs
    • 1 cup sesame seeds
    • Vegetable oil, for frying

    For the Feta Tzatziki:

    • 1 cup Greek yogurt
    • 1/2 cup feta cheese, crumbled
    • 1 small cucumber, grated and squeezed to remove excess water
    • 2 cloves garlic, minced
    • 1 tablespoon lemon juice
    • Salt and pepper, to taste

    For the Bowls:

    • Mixed greens (lettuce, spinach, arugula)
    • Cooked quinoa or rice
    • Cherry tomatoes, halved
    • Cucumber slices
    • Red onion slices

    Instructions:

    1. Prepare the Chicken Schnitzel:
      • Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip into beaten eggs, and then coat in a mixture of breadcrumbs and sesame seeds.
      • Heat oil in a large skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain any excess oil.
    2. Make the Feta Tzatziki:
      • In a bowl, combine Greek yogurt, crumbled feta cheese, grated cucumber, minced garlic, and lemon juice. Season with salt and pepper to taste. Mix well until all ingredients are incorporated. Chill in the refrigerator until ready to use.
    3. Assemble the Bowls:
      • Start with a base of mixed greens and cooked quinoa or rice in each bowl. Slice the schnitzel into strips and arrange over the base. Add cherry tomatoes, cucumber slices, and red onion for added freshness and crunch.
      • Generously top each bowl with the feta tzatziki, allowing the creamy sauce to meld with the warm schnitzel and cool vegetables.
