This Korean miso glazed salmon is rich, savoury and slightly sweet, with a subtle kick of heat. It’s a simple dish that feels elevated, perfect for a quick weeknight dinner or something a little more special.
Ingredients
- 2 salmon fillets
- 1 tbsp white miso paste
- 1 tbsp gochujang (Korean chilli paste)
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 garlic clove, minced
- 1 cup cooked jasmine rice
- 2 tbsp chopped spring onions
- 1 tbsp coriander leaves
- 1 tsp sesame seeds
Method
- Preheat your oven to 200°C (fan-forced). Line a baking tray with baking paper.
- In a small bowl, mix the miso paste, gochujang, honey, soy sauce, sesame oil, ginger and garlic until smooth.
- Place the salmon fillets on the tray and spoon the glaze evenly over the top. Let it sit for 10 minutes to absorb the flavours.
- Bake for 10–12 minutes, depending on thickness, until the salmon is just cooked through and slightly caramelised on top.
- Serve over warm jasmine rice and finish with spring onions, coriander and sesame seeds.
This dish is best served fresh, with the glaze still glossy and the salmon tender. It’s a simple way to bring bold, balanced flavours into your everyday cooking without overcomplicating the process.
