Fresh, light and full of flavour, these ginger chicken wraps combine a savoury Asian-inspired marinade with cool, creamy tzatziki. Crisp lettuce and cucumber keep them refreshing, making them perfect for an easy lunch or warm-weather dinner.

Ingredients
4 chicken breasts, cut into chunks
½ cup soy sauce
2 tsp ground ginger
1 tbsp olive oil
½ tsp dried dill
¼ tsp black pepper
8–10 large cos lettuce leaves
1 cucumber, sliced
Sesame seeds, to serve
For the tzatziki:
½ cup Greek yoghurt
¼ cup cucumber, finely diced
1 garlic clove, crushed
1 tsp dried dill
Squeeze of fresh lemon juice
Salt and pepper
Method
Combine the soy sauce, ginger, olive oil, dill and pepper in a bowl. Add the chicken and toss well to coat. Cover and refrigerate for at least 30 minutes.
Meanwhile, make the tzatziki by combining the Greek yoghurt, diced cucumber, garlic and dill. Add a squeeze of lemon juice, season with salt and pepper and refrigerate until ready to serve.
Thread the marinated chicken onto skewers. Cook on a barbecue or grill over medium heat for approximately 5 minutes on each side, or until the chicken is golden and completely cooked through.
Arrange the crisp lettuce leaves on a serving platter and add sliced cucumber. Remove the chicken from the skewers and divide between the lettuce cups.
Spoon over the chilled tzatziki, scatter with sesame seeds and serve straight away.
