If you are craving comfort food, this healthy recipe is for you, as the beef melts in your mouth after cooking all day in a rich tomato sauce.
Ingredients
1kg beef brisket or beef chuck roast
1tbsp olive oil
1 chopped brown onion
1 minced clove of garlic
½ cup beef stock
1 400g can of diced tomatoes
500g cooked pasta
½ cup tomato paste
2tbsp finely chopped fresh Italian herbs
Sea salt and black pepper to season
Parmesan cheese for serving
Instructions
- In a frying pan heat the olive oil over high heat. Season the beef then sear on all sides until browned, approximately five minutes each side. Put the beef in the slow cooker.
- Add the garlic and onion to the frying pan and cook over medium heat until onion is transparent and fragrant, and put in the slow cooker.
- Add the herbs, beef stock, tomato paste and canned tomatoes to the slow cooker and cook on high for six hours or on low for eight hours. The beef is done when you can pull it apart with a fork easily.
- Cook the pasta according to the packet instructions and add to the slow cooker and mix thoroughly. Serve with grated Parmesan cheese.
